Measuring dry ingredients
Use a spoon to fill your measuring cup with flour, sugar, breadcrumbs, and all other dry ingredients (the exception is when the recipe calls for you to "pack" the ingredient as you see with brown sugar). Shaking the cup to make level is not advised! Instead, use the straight edge of a knife (not the cutting edge) and level off the ingredient. Leveling it off gives you one level cup. If the recipe calls for a heaping cup, do not level off the cup, leave a small mounded top. Why do some recipes call for ingredients to be lightly or firmly packed? In short, because bulky items leave air pockets, you get a truer measure by applying pressure. That being said, you don’t want to apply so much pressure as to make it difficult to remove the ingredient from it’s cup, or crush the ingredient. You will get an inaccurate measure that way and you could ruin your recipe! We don’t like it when that happens!
Measuring liquids:
When measuring liquids you should always use a glass measuring cup. Read at eye level for an accurate reading.
