low carb lasagna!
4 zucchini, peeled and sliced 15 oz ricotta 1 lb mozzarella cheese, grated 1 spinach, frozen, chopped 4 cloves garlic, minced 1/2 C onion, yellow chopped 2 Tbsp olive oil 1 lb ground beef, lean 1/2 tsp basil 1/2 tsp oregano 1 26 oz jar spaghetti sauce 1/2 C parmesan cheese
Heat oven to 350 degrees Spray 9x13 baking dish In large skillet heat olive oil with garlic and onion Add ground beef and brown In another large bowl add ricotta, thawed and drained spinach, basil and oregano, parmesan cheese Add salt and pepper to taste in both meat mix and cheese mix Grate mozzarella cheese Lay one layer of zucchini sliced lengthwise (thinly) on bottom of pan, spread layer of sauce over zucchini Add a layer of cheese mix, then grated mozzarella cheese Repeat once End with one more layer zucchini, then sauce then mozzarella cheese Bake for 45-50 minutes or until zucchini are tender in the center of the pan
