low carb enchiladas!
1 package low carb whole wheat tortillas 2 lb chicken breasts 2 C scallions, chopped 2 bags ready made mexican style cheese, grated 1 large can enchilada sauce 1 can black olives
Boil chicken until cooked through Take out and shred in bowl In four bowls put chopped scallions, olives and grated cheese, and sauce Dip tortilla in sauce, fill with chicken a few scallions, a few olives, and cheese and roll in baking dish Continue until ingredients are gone If you run out of chicken before cheese, make some cheese enchiladas Top off with sauce, scallions, a few olives and some more cheese Bake until hot all the way through on 350, about 20 minutes
