Baja chicken tacos   (Serves: 4)
This is a great recipe for using up left-over grilled or baked chicken.
Ingredients
1 lb chicken, breasts or thighs, boneless and skinless
1 Tbsp oil, olive
1 cup corn, frozen
1 cup salsa
8 tortillas, flour
1 cup olives, black, sliced
 
Instructions
Cut chicken into bite size pieces. Heat oil over med heat, cook chicken until no longer pink or until hot if using leftover chicken.
Add corn, drained olives and salsa and cook until corn is heated through. Reduce heat. Warm tortillas in microwave.
Fill tortillas with chicken mixture and serve.
